Ingredients

- 1 tablespoon olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper (optional)
- 1 cup brown or green lentils, rinsed
- 4 cups vegetable broth
- 2 sweet potatoes, peeled and cubed
- 1 (14.5 ounce) can diced tomatoes, undrained
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Add onion, carrots, and celery and cook until softened, about 5-7 minutes.
- Stir in garlic, cumin, paprika, and cayenne pepper (if using) and cook for 1 minute more.
- Add lentils, vegetable broth, sweet potatoes, and diced tomatoes.
- Season with salt and pepper.
- Bring to a boil, then reduce heat and simmer for 25-30 minutes, or until lentils and sweet potatoes are tender.
- Garnish with fresh parsley before serving.
Notes
- You can add other vegetables like spinach or kale.
- For a creamier stew, blend a portion of it before serving.
