Hearty Lentil & Sweet Potato Stew

Description

A filling and flavorful stew perfect for a cold day.


Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 cup brown or green lentils, rinsed
  • 4 cups vegetable broth
  • 2 sweet potatoes, peeled and cubed
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add onion, carrots, and celery and cook until softened, about 5-7 minutes.
  3. Stir in garlic, cumin, paprika, and cayenne pepper (if using) and cook for 1 minute more.
  4. Add lentils, vegetable broth, sweet potatoes, and diced tomatoes.
  5. Season with salt and pepper.
  6. Bring to a boil, then reduce heat and simmer for 25-30 minutes, or until lentils and sweet potatoes are tender.
  7. Garnish with fresh parsley before serving.

Notes

  • You can add other vegetables like spinach or kale.
  • For a creamier stew, blend a portion of it before serving.
