Herbed Couscous

Description

A simple side dish with fresh herbs.


Ingredients

Scale
  • 1 cup couscous
  • 1 1/4 cups vegetable broth
  • 2 tablespoons olive oil
  • 1/4 cup chopped fresh herbs (parsley, mint, dill)
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a saucepan.
  2. Add couscous and toast for 1-2 minutes.
  3. Pour in vegetable broth and bring to a boil.
  4. Remove from heat, cover, and let stand for 5 minutes.
  5. Fluff with a fork.
  6. Stir in fresh herbs, salt, and pepper.
