Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup carrots, diced
  • 1 cup peas
  • 1/2 cup celery, chopped
  • 1/3 cup butter
  • 1/3 cup flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1 3/4 cups chicken broth
  • 2/3 cup milk
  • 1 package refrigerated pie crusts (or homemade)

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a saucepan, melt butter over medium heat. Stir in flour, salt, pepper, and garlic powder.
  3. Gradually whisk in chicken broth and milk. Cook until thickened.
  4. Add chicken, carrots, peas, and celery. Stir well.
  5. Line a pie dish with one crust. Pour filling into the crust.
  6. Cover with the second crust. Seal edges and cut slits in the top.
  7. Bake for 30-35 minutes or until golden brown.
  8. Let cool for 10 minutes before serving.

Notes

  • Use leftover rotisserie chicken for convenience.
  • For extra flavor, add thyme or rosemary.
  • Freeze unbaked pie for later use.
