Ingredients

- 4 medium potatoes, cut into cubes
- 4 large carrots, sliced
- 2 tbsp olive oil
- 2 tbsp honey
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, toss potatoes and carrots with olive oil.
- Add honey, salt, pepper, and thyme. Mix well.
- Spread vegetables evenly on a baking sheet.
- Roast for 30-35 minutes, stirring halfway.
- Serve warm.
