Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 tsp turmeric powder
  • 1/2 tsp cumin
  • 4 cups vegetable broth
  • 1 cup chopped broccoli
  • 1 cup chopped cauliflower
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery; cook until softened, about 5 minutes.
  3. Stir in garlic, ginger, turmeric, and cumin; cook for 1 minute.
  4. Pour in vegetable broth, add broccoli and cauliflower.
  5. Bring to a boil, then reduce heat and simmer until vegetables are tender, about 15 minutes.
  6. Season with salt and pepper.
  7. Garnish with fresh cilantro before serving.

Notes

  • Adjust the amount of turmeric to your taste.
  • Add a pinch of red pepper flakes for a little heat.
