Ingredients

- 1 tbsp olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 1 inch ginger, grated
- 1 tsp turmeric powder
- 1/2 tsp cumin
- 4 cups vegetable broth
- 1 cup chopped broccoli
- 1 cup chopped cauliflower
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery; cook until softened, about 5 minutes.
- Stir in garlic, ginger, turmeric, and cumin; cook for 1 minute.
- Pour in vegetable broth, add broccoli and cauliflower.
- Bring to a boil, then reduce heat and simmer until vegetables are tender, about 15 minutes.
- Season with salt and pepper.
- Garnish with fresh cilantro before serving.
Notes
- Adjust the amount of turmeric to your taste.
- Add a pinch of red pepper flakes for a little heat.
