A delightful homemade version of the classic oatmeal cream pie, infused with warm gingerbread spices.

  • 1/2 cup (1 stick) unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together 1 cup softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in 1 teaspoon vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, salt, ginger, cinnamon, cloves, and nutmeg.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Stir in the rolled oats.
  7. Drop rounded tablespoons of dough onto the prepared baking sheets, about 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges are lightly golden. Let cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
  9. While the cookies cool, prepare the filling. In a medium bowl, beat together the softened cream cheese and 1/2 cup softened butter until smooth.
  10. Gradually add the powdered sugar, mixing until well combined and creamy. Stir in 1 teaspoon vanilla extract.
  11. Spread a generous amount of filling onto the bottom of one cookie and top with another cookie to create a sandwich. Repeat with remaining cookies.

  • For a stronger gingerbread flavor, you can add an extra 1/4 teaspoon of ginger and cinnamon.
