Yield: 12 large servings
Ingredients:
• 1 cup creamy peanut butter (240 g)
• 1 cup granulated sugar (200 g)
• 1 large egg
• 1 tsp vanilla extract
• ½ tsp baking soda
• ¼ tsp salt
How to make them:
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, mix together the peanut butter and sugar until thick and smooth.
- Add the egg and vanilla extract, then mix until fully combined.
- Stir in the baking soda and salt. The dough will be thick and slightly glossy.
- Scoop large dough balls (about 2 tablespoons each) and place them on the baking sheet, leaving space between them.
- Use a fork to gently press a crisscross pattern on each cookie. This classic step helps the cookies bake evenly.
- Bake for 10–12 minutes, until the edges are lightly golden and the centers are still soft.
- Let the peanut butter cookies cool on the pan for 5 minutes before transferring to a rack. They will firm up slightly while staying soft inside.
These homemade peanut butter cookies are incredible with a cold glass of milk or a warm cup of coffee.
