- 1 ½ cups crushed biscuits (digestive, graham crackers, or shortbread)
- ½ cup melted unsalted butter
- 2 tablespoons sugar (optional)
- 1 can sweetened condensed milk
- ½ cup fresh lemon juice
- 2 tablespoons lemon zest
- 3 egg yolks
Instructions
- Preheat oven to 350°F (175°C). Crush biscuits into fine crumbs.
- Mix crumbs with melted butter and sugar. Press into a tart pan evenly.
- Bake crust for 10 minutes, then let it cool.
- In a bowl, whisk egg yolks until smooth.
- Add sweetened condensed milk and mix well.
- Slowly pour in lemon juice while stirring.
- Fold in lemon zest for extra flavor.
- Pour filling into cooled crust.
- Bake at 325°F (163°C) for 15–18 minutes until the center is set.
- Let the tart cool, then refrigerate for at least 2 hours before serving.
Notes
For a no-bake version, use a pre-made graham cracker crust and refrigerate instead of baking. Store leftovers in an airtight container in the fridge for up to 3 days.
