Lemon Chicken Orzo Soup

Description

A comforting soup with chicken, orzo pasta, and a bright lemon flavor.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 8 cups chicken broth
  • 1 cup orzo pasta
  • 1/2 cup lemon juice
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat.
  2. Add chicken and cook until browned.
  3. Add onion, carrots, and celery. Cook until softened, about 5 minutes.
  4. Pour in chicken broth and bring to a boil.
  5. Add orzo pasta and cook until tender, about 8-10 minutes.
  6. Stir in lemon juice and parsley.
  7. Season with salt and pepper.
  8. Serve hot.

Notes

  • You can add other vegetables, such as zucchini or spinach.
  • For a creamier soup, stir in a little heavy cream at the end.
