Description

Tangy lemon bars with a buttery crumb topping and base.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1 1/2 cups granulated sugar
  • 4 large eggs
  • 1/4 cup all-purpose flour
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
  2. In a medium bowl, combine 1 cup flour, 1/2 cup sugar, and 1/4 teaspoon salt. Cut in the cold butter until the mixture resembles coarse crumbs.
  3. Press this mixture evenly into the bottom of the prepared pan for the crust. Bake for 15 minutes.
  4. While the crust bakes, prepare the lemon filling. In a large bowl, whisk together 1 1/2 cups sugar and the eggs until well combined.
  5. Whisk in 1/4 cup flour, lemon juice, lemon zest, baking powder, and 1/4 teaspoon salt until smooth.
  6. Pour the lemon filling over the hot crust.
  7. Bake for an additional 20-25 minutes, or until the filling is set and the edges are lightly golden.
  8. Let the bars cool completely in the pan before cutting into squares.

  • For a finer crumb, you can pulse the crust ingredients in a food processor.
