Description

Chewy red velvet cookies with a cream cheese frosting.


Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 1 cup packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon red food coloring
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup white chocolate chips
  • For the Frosting:
  • 8 ounces cream cheese, softened
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 3 cups powdered sugar

Instructions

  1. Cream together the softened butter and sugars until light and fluffy.
  2. Beat in the eggs one at a time, then stir in the vanilla extract and red food coloring.
  3. In a separate bowl, whisk together the cocoa powder, flour, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Stir in the white chocolate chips.
  6. Cover the dough and chill for at least 1 hour.
  7. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  8. Scoop rounded balls of dough onto the prepared baking sheets, leaving about 2 inches between cookies.
  9. Bake for 10-12 minutes, or until the edges are set and the centers are still slightly soft.
  10. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
  11. For the frosting: Beat together the softened cream cheese and butter until smooth.
  12. Stir in the vanilla extract.
  13. Gradually add the powdered sugar, mixing until well combined and smooth.
  14. Spread or pipe the frosting onto the cooled cookies.

Notes

  • For a more intense red color, you can add an extra teaspoon of red food coloring.
  • If you don’t have white chocolate chips, you can substitute them with semi-sweet chocolate chips.
  • The dough can be made ahead of time and stored in the refrigerator for up to 3 days.
