Description

Limoncello Mascarpone Cake is a delightful Italian-inspired dessert that combines the bright, zesty flavors of limoncello with the creamy richness of mascarpone cheese.


Ingredients

  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup unsalted butter, softened
  • 1 3/4 cups granulated sugar
  • 4 large eggs
  • 1/2 cup limoncello
  • 1/4 cup fresh lemon juice
  • 1 tbsp lemon zest
  • 1/2 cup sour cream
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a separate large bowl, beat butter and sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition.
  5. Mix in limoncello, lemon juice, lemon zest, sour cream, and vanilla extract.
  6. Gradually add dry ingredients to wet ingredients, mixing until just combined.
  7. Divide batter evenly between prepared cake pans and bake for 25-30 minutes.
  8. Let cakes cool completely before frosting.

Notes

For extra lemon flavor, brush the cake layers with additional limoncello before frosting.
