Description

A creamy and hearty loaded potato soup with crispy bacon, melted cheese, and fresh chives.


Ingredients

  • 4 large russet potatoes, peeled and diced
  • 6 slices bacon, cooked and crumbled
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup sour cream
  • 1/4 cup chopped fresh chives
  • 4 cups chicken broth
  • 1 cup whole milk
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp butter
  • Salt and pepper to taste

Instructions

  1. Melt butter in a large pot over medium heat. Add onion and garlic, sauté until softened.
  2. Add diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes until potatoes are tender.
  3. Use a potato masher to partially blend the soup, leaving some texture.
  4. Stir in milk, sour cream, and half of the bacon. Simmer for 5 more minutes.
  5. Season with salt and pepper. Serve hot, topped with shredded cheese, remaining bacon, and fresh chives.

Notes

  • For extra creaminess, stir in 1/4 cup heavy cream.
  • Store leftovers in an airtight container for up to 3 days.
  • Reheat gently on the stovetop to prevent curdling.
