Ingredients

- 1 cup diced fresh mango
- 1/4 cup shredded coconut
Instructions
- In a saucepan, whisk together coconut milk, sugar, and cornstarch until smooth.
- Cook over medium heat, stirring constantly, until the mixture thickens.
- Remove from heat and stir in vanilla extract. Let cool completely.
- In serving glasses, layer the cooled coconut pudding with diced mango.
- Top with shredded coconut.
- Chill for at least 30 minutes before serving.
Notes
- For a richer flavor, use full-fat coconut milk.
- You can add a layer of crushed cookies or granola for added texture.
