- 2 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 onion, diced
- 3 garlic cloves, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1/2 cup sun-dried tomatoes, chopped
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp red pepper flakes
- Salt and pepper to taste
- 1/2 cup grated parmesan cheese
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced onion and sauté until soft, about 5 minutes.
- Add minced garlic and cook for 1 minute until fragrant.
- Place chicken breasts in the pot and sear for 2-3 minutes per side.
- Pour in chicken broth, then add sun-dried tomatoes, oregano, basil, red pepper flakes, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 15 minutes until chicken is cooked through.
- Remove chicken, shred it, and return to the pot.
- Stir in heavy cream and parmesan cheese until well combined.
- Simmer for another 5 minutes.
- Garnish with fresh parsley before serving.
Notes
- For extra flavor, use sun-dried tomatoes packed in oil.
- Adjust the red pepper flakes for more or less heat.
- Store leftovers in an airtight container in the fridge for up to 3 days.
