Description

A fun twist on classic meatloaf, these individual-sized meatloaf cupcakes are topped with creamy, whipped potatoes for a comforting and delicious meal.


Ingredients

  • 1 lb ground beef (or turkey, chicken, or plant-based meat)
  • 1 small onion, grated
  • 1 small carrot, grated
  • 1 egg
  • 1/2 cup Parmesan cheese
  • 1/4 cup tomato ketchup
  • 1/2 cup Panko breadcrumbs or oats
  • 1 tsp garlic powder
  • 1/2 tsp dried oregano
  • 1/2 tsp dried thyme
  • Salt and pepper to taste
  • 4 medium potatoes, peeled and chopped
  • 2 tbsp butter
  • 1/4 cup milk (or dairy-free alternative)
  • Optional: Garlic, cheese, or herbs for extra flavor
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a muffin tin.
  2. In a large bowl, mix ground meat, grated onion, grated carrot, egg, Parmesan cheese, tomato ketchup, breadcrumbs, garlic powder, oregano, thyme, salt, and pepper.
  3. Spoon mixture into muffin tin, pressing gently.
  4. Bake for 20-25 minutes until cooked through.
  5. Meanwhile, boil potatoes until fork-tender (about 15 minutes), then drain.
  6. Mash with butter and milk, then whip until smooth. Add optional seasonings.
  7. Once meatloafs are done, cool slightly, then pipe or spoon whipped potatoes on top.
  8. Garnish with herbs or gravy, serve warm.
