A fun twist on classic meatloaf, these individual-sized meatloaf cupcakes are topped with creamy, whipped potatoes for a comforting and delicious meal.

- 1 lb ground beef (or turkey, chicken, or plant-based meat)
- 1 small onion, grated
- 1 small carrot, grated
- 1 egg
- 1/2 cup Parmesan cheese
- 1/4 cup tomato ketchup
- 1/2 cup Panko breadcrumbs or oats
- 1 tsp garlic powder
- 1/2 tsp dried oregano
- 1/2 tsp dried thyme
- Salt and pepper to taste
- 4 medium potatoes, peeled and chopped
- 2 tbsp butter
- 1/4 cup milk (or dairy-free alternative)
- Optional: Garlic, cheese, or herbs for extra flavor
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a muffin tin.
- In a large bowl, mix ground meat, grated onion, grated carrot, egg, Parmesan cheese, tomato ketchup, breadcrumbs, garlic powder, oregano, thyme, salt, and pepper.
- Spoon mixture into muffin tin, pressing gently.
- Bake for 20-25 minutes until cooked through.
- Meanwhile, boil potatoes until fork-tender (about 15 minutes), then drain.
- Mash with butter and milk, then whip until smooth. Add optional seasonings.
- Once meatloafs are done, cool slightly, then pipe or spoon whipped potatoes on top.
- Garnish with herbs or gravy, serve warm.
