Ingredients

- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 carrot, chopped
- 1 celery stalk, chopped
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1/2 teaspoon red pepper flakes (optional)
- 1 cup brown or green lentils, rinsed
- 6 cups vegetable broth
- 1 lemon, juiced
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Add onion, garlic, carrot, and celery. Cook until softened, about 5-7 minutes.
- Stir in oregano, thyme, and red pepper flakes (if using). Cook for 1 minute.
- Add lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 25-30 minutes, or until lentils are tender.
- Stir in lemon juice. Season with salt and pepper.
- Serve hot, garnished with fresh parsley.
Notes
- For a creamier soup, blend a portion of the soup before serving.
- Add other vegetables like zucchini or bell peppers.
