Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, chopped
  • 1 celery stalk, chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 cup brown or green lentils, rinsed
  • 6 cups vegetable broth
  • 1 lemon, juiced
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add onion, garlic, carrot, and celery. Cook until softened, about 5-7 minutes.
  3. Stir in oregano, thyme, and red pepper flakes (if using). Cook for 1 minute.
  4. Add lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 25-30 minutes, or until lentils are tender.
  5. Stir in lemon juice. Season with salt and pepper.
  6. Serve hot, garnished with fresh parsley.

Notes

  • For a creamier soup, blend a portion of the soup before serving.
