Description

A flavorful and hearty soup with chickpeas and Moroccan spices.


Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper (optional)
  • 4 cups vegetable broth
  • 1 (15-ounce) can chickpeas, rinsed and drained
  • 1 (14.5-ounce) can diced tomatoes, undrained
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and cook until softened, about 5 minutes.
  3. Add garlic, cumin, coriander, turmeric, and cayenne pepper (if using). Cook for 1 minute more.
  4. Pour in vegetable broth and add chickpeas and diced tomatoes.
  5. Bring to a boil, then reduce heat and simmer for 15 minutes.
  6. Stir in cilantro, salt, and pepper.
  7. Serve hot.

Notes

  • Adjust the amount of cayenne pepper to your preference.
  • Serve with a dollop of yogurt or a squeeze of lemon juice.
