Ingredients

- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1/4 teaspoon cayenne pepper (optional)
- 4 cups vegetable broth
- 1 (15-ounce) can chickpeas, rinsed and drained
- 1 (14.5-ounce) can diced tomatoes, undrained
- 1/4 cup chopped fresh cilantro
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and cook until softened, about 5 minutes.
- Add garlic, cumin, coriander, turmeric, and cayenne pepper (if using). Cook for 1 minute more.
- Pour in vegetable broth and add chickpeas and diced tomatoes.
- Bring to a boil, then reduce heat and simmer for 15 minutes.
- Stir in cilantro, salt, and pepper.
- Serve hot.
Notes
- Adjust the amount of cayenne pepper to your preference.
- Serve with a dollop of yogurt or a squeeze of lemon juice.
