Ingredients

  • 2 tbsp olive oil
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 1 tbsp grated ginger
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp paprika
  • 1/2 tsp turmeric
  • 1/4 tsp cinnamon
  • 1 can (14 oz) diced tomatoes
  • 2 cans (15 oz each) chickpeas, drained and rinsed
  • 1 cup vegetable broth
  • 1/2 cup dried apricots, chopped
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and sauté until soft, about 5 minutes.
  3. Stir in garlic, ginger, cumin, coriander, paprika, turmeric, and cinnamon. Cook for 1 minute.
  4. Add diced tomatoes, chickpeas, vegetable broth, and apricots. Bring to a simmer.
  5. Cover and cook for 20 minutes, stirring occasionally.
  6. Season with salt and pepper.
  7. Garnish with fresh cilantro before serving.

Notes

  • For extra heat, add a pinch of cayenne pepper.
  • Serve with couscous or flatbread.
