Description
A hearty Moroccan chickpea tagine packed with rich flavors and warming spices. This vegetarian dish is perfect for a cozy meal.

- 2 tbsp olive oil
 - 1 onion, diced
 - 3 garlic cloves, minced
 - 1 tbsp grated ginger
 - 1 tsp ground cumin
 - 1 tsp ground coriander
 - 1 tsp paprika
 - 1/2 tsp turmeric
 - 1/4 tsp cinnamon
 - 1 can (14 oz) diced tomatoes
 - 2 cans (15 oz each) chickpeas, drained and rinsed
 - 1 cup vegetable broth
 - 1/2 cup dried apricots, chopped
 - Salt and pepper to taste
 - Fresh cilantro for garnish
 
Instructions
- Heat olive oil in a large pot over medium heat.
 - Add onion and sauté until soft, about 5 minutes.
 - Stir in garlic, ginger, cumin, coriander, paprika, turmeric, and cinnamon. Cook for 1 minute.
 - Add diced tomatoes, chickpeas, vegetable broth, and apricots. Bring to a simmer.
 - Cover and cook for 20 minutes, stirring occasionally.
 - Season with salt and pepper.
 - Garnish with fresh cilantro before serving.
 
Notes
- For extra heat, add a pinch of cayenne pepper.
 - Serve with couscous or flatbread.
