Description

A copycat recipe for the popular Olive Garden salad with crisp lettuce, tomatoes, olives, and a creamy Italian dressing.


Ingredients

  • 1 head romaine lettuce, chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup black olives, sliced
  • 1/4 cup pepperoncini, sliced
  • 1/4 cup croutons
  • 1/4 cup grated Parmesan cheese
  • For the dressing:
  • 1/2 cup mayonnaise
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon water
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a large bowl, combine the chopped romaine lettuce, cherry tomatoes, red onion, black olives, and pepperoncini.
  2. In a separate small bowl, whisk together the mayonnaise, olive oil, red wine vinegar, water, oregano, basil, garlic powder, salt, and pepper until well combined.
  3. Pour the dressing over the salad ingredients and toss gently to coat.
  4. Add the croutons and grated Parmesan cheese, and toss again.
  5. Serve immediately.

Notes

  • For a tangier dressing, add an extra teaspoon of red wine vinegar.
  • You can add other vegetables like bell peppers or cucumbers if desired.
  • Make the dressing ahead of time and store it in the refrigerator.
