Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 1.5 cups chicken broth
  • 1/2 cup heavy cream
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and minced garlic, sauté until softened.
  3. Season chicken with salt, pepper, and thyme, then add to the pot. Cook until browned.
  4. Add rice, chicken broth, and heavy cream. Stir well.
  5. Cover and simmer for 20 minutes, or until rice is tender and chicken is cooked through.
  6. Remove chicken, shred or chop, then return to the pot. Stir and serve.

Notes

  • Use basmati rice for a fluffier texture.
  • For extra flavor, add grated Parmesan cheese before serving.
