- 2 boneless, skinless chicken breasts
- 1 cup long-grain white rice
- 1.5 cups chicken broth
- 1/2 cup heavy cream
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 1 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced onion and minced garlic, sauté until softened.
- Season chicken with salt, pepper, and thyme, then add to the pot. Cook until browned.
- Add rice, chicken broth, and heavy cream. Stir well.
- Cover and simmer for 20 minutes, or until rice is tender and chicken is cooked through.
- Remove chicken, shred or chop, then return to the pot. Stir and serve.
Notes
- Use basmati rice for a fluffier texture.
- For extra flavor, add grated Parmesan cheese before serving.
- Replace chicken broth with vegetable broth for a vegetarian version.
