One-Pot & Slow Cooker Wonders: Easy, Delicious Meals

Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 (10 ounce) can diced tomatoes and green chilies, undrained
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. In a large pot or slow cooker, brown the ground beef with the chopped onion. Drain off any excess fat.
  2. Add the minced garlic and cook for 1 minute more until fragrant.
  3. Stir in the diced tomatoes, kidney beans, diced tomatoes and green chilies, chili powder, cumin, salt, and pepper.
  4. If using a pot, bring to a simmer, then reduce heat, cover, and cook for at least 30 minutes, stirring occasionally.
  5. If using a slow cooker, cover and cook on low for 6-8 hours or on high for 3-4 hours.
  6. Serve hot.

Notes

  • Serve with your favorite toppings such as shredded cheese, sour cream, or chopped cilantro.
  • This recipe can be easily customized with other vegetables like corn or bell peppers.
