- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (15 ounce) can diced tomatoes, undrained
- 1 (15 ounce) can kidney beans, rinsed and drained
- 1 (10 ounce) can diced tomatoes and green chilies, undrained
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
Instructions
- In a large pot or slow cooker, brown the ground beef with the chopped onion. Drain off any excess fat.
- Add the minced garlic and cook for 1 minute more until fragrant.
- Stir in the diced tomatoes, kidney beans, diced tomatoes and green chilies, chili powder, cumin, salt, and pepper.
- If using a pot, bring to a simmer, then reduce heat, cover, and cook for at least 30 minutes, stirring occasionally.
- If using a slow cooker, cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Serve hot.
Notes
- Serve with your favorite toppings such as shredded cheese, sour cream, or chopped cilantro.
- This recipe can be easily customized with other vegetables like corn or bell peppers.
