Description
A simple pasta dish with sun-dried tomatoes and feta cheese, all cooked in one pot.
Ingredients

- 1 pound pasta
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (14.5 ounce) can crushed tomatoes
- 1/2 cup sun-dried tomatoes, oil-packed, drained and chopped
- 4 cups vegetable broth
- Salt and pepper to taste
- 8 ounces feta cheese, crumbled
- Fresh basil, chopped (for garnish)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
- Stir in crushed tomatoes, sun-dried tomatoes, and vegetable broth. Season with salt and pepper.
- Bring to a boil, then add pasta. Cook until pasta is tender, about 8-10 minutes, stirring occasionally to prevent sticking.
- Remove from heat and stir in feta cheese.
- Garnish with fresh basil before serving.
Notes
- You can add cooked chicken or shrimp for extra protein.
- Adjust the amount of sun-dried tomatoes to your preference.
