One-Pot Sun-Dried Tomato Feta Pasta

Description

A simple pasta dish with sun-dried tomatoes and feta cheese, all cooked in one pot.


Ingredients

  • 1 pound pasta
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can crushed tomatoes
  • 1/2 cup sun-dried tomatoes, oil-packed, drained and chopped
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • 8 ounces feta cheese, crumbled
  • Fresh basil, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  3. Stir in crushed tomatoes, sun-dried tomatoes, and vegetable broth. Season with salt and pepper.
  4. Bring to a boil, then add pasta. Cook until pasta is tender, about 8-10 minutes, stirring occasionally to prevent sticking.
  5. Remove from heat and stir in feta cheese.
  6. Garnish with fresh basil before serving.

Notes

  • You can add cooked chicken or shrimp for extra protein.
  • Adjust the amount of sun-dried tomatoes to your preference.
