Description
A simple soup with white beans and kale, cooked in one pot.
Ingredients
Scale
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes (optional)
- 6 cups vegetable broth
- 1 (15-ounce) can cannellini beans, rinsed and drained
- 5 cups chopped kale
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and cook until softened, about 5 minutes.
- Add garlic, oregano, and red pepper flakes (if using). Cook for 1 minute.
- Pour in vegetable broth and bring to a boil.
- Add cannellini beans and kale.
- Reduce heat and simmer for 15 minutes, or until kale is tender.
- Season with salt and pepper.
Notes
- You can add a squeeze of lemon juice before serving.
- Serve with crusty bread.
