One-Pot White Bean & Kale Soup

Description

A simple soup with white beans and kale, cooked in one pot.


Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • 6 cups vegetable broth
  • 1 (15-ounce) can cannellini beans, rinsed and drained
  • 5 cups chopped kale
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and cook until softened, about 5 minutes.
  3. Add garlic, oregano, and red pepper flakes (if using). Cook for 1 minute.
  4. Pour in vegetable broth and bring to a boil.
  5. Add cannellini beans and kale.
  6. Reduce heat and simmer for 15 minutes, or until kale is tender.
  7. Season with salt and pepper.

Notes

  • You can add a squeeze of lemon juice before serving.
  • Serve with crusty bread.
