Ingredients

- 4 cod fillets (6 oz each)
- 1 pint cherry tomatoes, halved
- 1/2 cup pitted Kalamata olives, halved
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 400°F (200°C).
- Place cod fillets in a baking dish.
- In a bowl, mix tomatoes, olives, olive oil, garlic, oregano, salt, and pepper.
- Spoon the tomato mixture over the cod.
- Roast for 15-20 minutes until the cod flakes easily.
- Garnish with fresh parsley and serve.

- Adjust seasoning to taste.
- Serve with crusty bread or rice.
