Ingredients

  • 4 cod fillets (6 oz each)
  • 1 pint cherry tomatoes, halved
  • 1/2 cup pitted Kalamata olives, halved
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Place cod fillets in a baking dish.
  3. In a bowl, mix tomatoes, olives, olive oil, garlic, oregano, salt, and pepper.
  4. Spoon the tomato mixture over the cod.
  5. Roast for 15-20 minutes until the cod flakes easily.
