Ingredients

- 1 pint cherry tomatoes, halved
- 1/2 cup Kalamata olives, pitted
- 3 tbsp olive oil
- 2 garlic cloves, minced
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp lemon juice
- 2 tbsp fresh parsley, chopped
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix tomatoes, olives, garlic, olive oil, oregano, salt, and pepper.
- Place cod fillets in a baking dish and top with the tomato-olive mixture.
- Drizzle lemon juice over the fish.
- Roast for 15-20 minutes until the cod flakes easily.
- Garnish with fresh parsley before serving.
