Artichoke Pasta Salad

Description

A simple and refreshing pasta salad featuring marinated artichoke hearts.


Ingredients

  • 1 pound pasta, cooked and cooled
  • 1 (14 ounce) can marinated artichoke hearts, drained and chopped
  • 1/2 cup chopped red onion
  • 1/4 cup chopped fresh parsley
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste

Instructions

  1. In a large bowl, combine the cooked pasta, chopped artichoke hearts, red onion, and parsley.
  2. In a small bowl, whisk together the olive oil, red wine vinegar, and oregano.
  3. Pour the dressing over the pasta mixture and toss to combine.
  4. Season with salt and pepper to taste.
  5. Chill for at least 30 minutes before serving.

Notes

  • For a creamier salad, add 1/4 cup of mayonnaise or Greek yogurt to the dressing.
  • You can add other vegetables like bell peppers, cucumbers, or cherry tomatoes.
