Asian Pasta Salad

Description

A refreshing pasta salad with Asian-inspired flavors.


Ingredients

  • 1 pound pasta
  • 1 cup shredded carrots
  • 1 cup chopped broccoli florets
  • 1/2 cup chopped red bell pepper
  • 1/4 cup chopped green onions
  • 1/4 cup chopped cilantro
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  1. Cook pasta according to package directions. Drain and rinse with cold water.
  2. In a large bowl, combine cooked pasta, carrots, broccoli, red bell pepper, green onions, and cilantro.
  3. In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, ginger, garlic, and red pepper flakes (if using).
  4. Pour dressing over pasta mixture and toss to combine.
  5. Chill for at least 30 minutes before serving.

Notes

  • For a spicier salad, add more red pepper flakes.
  • You can add other vegetables like snap peas or edamame.
  • Cooked chicken or shrimp can be added for a protein boost.
