A refreshing pasta salad with Asian-inspired flavors.
Ingredients

- 1 pound pasta
- 1 cup shredded carrots
- 1 cup chopped broccoli florets
- 1/2 cup chopped red bell pepper
- 1/4 cup chopped green onions
- 1/4 cup chopped cilantro
- 1/4 cup soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 1 teaspoon grated fresh ginger
- 1 clove garlic, minced
- 1/2 teaspoon red pepper flakes (optional)
Instructions
- Cook pasta according to package directions. Drain and rinse with cold water.
- In a large bowl, combine cooked pasta, carrots, broccoli, red bell pepper, green onions, and cilantro.
- In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, ginger, garlic, and red pepper flakes (if using).
- Pour dressing over pasta mixture and toss to combine.
- Chill for at least 30 minutes before serving.
Notes
- For a spicier salad, add more red pepper flakes.
- You can add other vegetables like snap peas or edamame.
- Cooked chicken or shrimp can be added for a protein boost.
