Description

A simple and satisfying pasta salad with crispy bacon, fresh vegetables, and a creamy dressing.


Ingredients

  • 1 pound pasta, cooked and cooled
  • 1 pound bacon, cooked and crumbled
  • 1 cup chopped celery
  • 1 cup chopped red onion
  • 1 cup chopped bell pepper
  • 1 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the cooked and cooled pasta, crumbled bacon, chopped celery, chopped red onion, and chopped bell pepper.
  2. In a separate small bowl, whisk together the mayonnaise, Dijon mustard, and apple cider vinegar.
  3. Pour the dressing over the pasta mixture and toss to combine.
  4. Season with salt and pepper to taste.
  5. Chill for at least 30 minutes before serving.

Notes

  • For a lighter version, use Greek yogurt instead of mayonnaise.
  • Add other vegetables like peas, corn, or shredded carrots.
  • Garnish with fresh parsley before serving.
