Balsamic Pasta Salad

Description

A simple and flavorful pasta salad with a tangy balsamic dressing.


Ingredients

  • 1 pound pasta
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup Kalamata olives, pitted and halved
  • 1/4 cup crumbled feta cheese
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package directions. Drain and rinse with cold water.
  2. In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, red onion, Kalamata olives, and feta cheese.
  3. In a small bowl, whisk together the olive oil, balsamic vinegar, and oregano. Season with salt and pepper.
  4. Pour the dressing over the pasta mixture and toss to combine.
  5. Chill for at least 30 minutes before serving.

Notes

  • For a heartier salad, add grilled chicken or chickpeas.
  • Adjust the amount of balsamic vinegar to your preference.
