A simple and refreshing pasta salad featuring chickpeas and vegetables.
Ingredients

- 8 ounces pasta, cooked and cooled
- 1 (15 ounce) can chickpeas, rinsed and drained
- 1 cup chopped cucumber
- 1 cup chopped bell pepper
- 1/2 cup chopped red onion
- 1/4 cup chopped fresh parsley
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 clove garlic, minced
- Salt to taste
- Black pepper to taste
Instructions
- In a large bowl, combine the cooked pasta, chickpeas, cucumber, bell pepper, red onion, and parsley.
- In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and pepper.
- Pour the dressing over the pasta mixture and toss to combine.
- Chill for at least 30 minutes before serving.
Notes
- You can add other vegetables like cherry tomatoes or celery.
- For a creamier dressing, add a tablespoon of mayonnaise or Greek yogurt.
