Pasta Salad with Chickpeas

Description

A simple and refreshing pasta salad featuring chickpeas and vegetables.


Ingredients

  • 8 ounces pasta, cooked and cooled
  • 1 (15 ounce) can chickpeas, rinsed and drained
  • 1 cup chopped cucumber
  • 1 cup chopped bell pepper
  • 1/2 cup chopped red onion
  • 1/4 cup chopped fresh parsley
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 clove garlic, minced
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large bowl, combine the cooked pasta, chickpeas, cucumber, bell pepper, red onion, and parsley.
  2. In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and pepper.
  3. Pour the dressing over the pasta mixture and toss to combine.
  4. Chill for at least 30 minutes before serving.

Notes

  • You can add other vegetables like cherry tomatoes or celery.
  • For a creamier dressing, add a tablespoon of mayonnaise or Greek yogurt.
