Cucumber Pasta Salad

Description

A refreshing pasta salad with crisp cucumber and a light dressing.


Ingredients

  • 1 pound pasta, cooked and cooled
  • 1 large cucumber, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh dill, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup mayonnaise
  • 2 tablespoons lemon juice
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the cooked and cooled pasta, diced cucumber, chopped red onion, dill, and parsley.
  2. In a separate small bowl, whisk together the mayonnaise, lemon juice, and Dijon mustard.
  3. Pour the dressing over the pasta mixture and toss to combine.
  4. Season with salt and pepper to taste.
  5. Chill for at least 30 minutes before serving.

Notes

  • For a lighter version, use Greek yogurt instead of mayonnaise.
  • Add other vegetables like bell peppers or cherry tomatoes for extra color and flavor.
  • This salad can be made a day in advance.
