Description
A refreshing pasta salad with crisp cucumber and a light dressing.
Ingredients

- 1 pound pasta, cooked and cooled
- 1 large cucumber, diced
- 1/2 red onion, finely chopped
- 1/4 cup fresh dill, chopped
- 1/4 cup fresh parsley, chopped
- 1/2 cup mayonnaise
- 2 tablespoons lemon juice
- 1 tablespoon Dijon mustard
- Salt and pepper to taste
Instructions
- In a large bowl, combine the cooked and cooled pasta, diced cucumber, chopped red onion, dill, and parsley.
- In a separate small bowl, whisk together the mayonnaise, lemon juice, and Dijon mustard.
- Pour the dressing over the pasta mixture and toss to combine.
- Season with salt and pepper to taste.
- Chill for at least 30 minutes before serving.
Notes
- For a lighter version, use Greek yogurt instead of mayonnaise.
- Add other vegetables like bell peppers or cherry tomatoes for extra color and flavor.
- This salad can be made a day in advance.
