A refreshing pasta salad with crisp cucumber and a light dressing.
Ingredients

- 1 pound pasta, cooked and cooled
- 1 large cucumber, diced
- 1/2 red onion, finely chopped
- 1/4 cup fresh dill, chopped
- 1/2 cup mayonnaise
- 2 tablespoons lemon juice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- In a large bowl, combine the cooked and cooled pasta, diced cucumber, chopped red onion, and chopped dill.
- In a separate small bowl, whisk together the mayonnaise, lemon juice, salt, and pepper.
- Pour the dressing over the pasta mixture and toss gently to combine.
- Chill for at least 30 minutes before serving.
Notes
- For a tangier flavor, add a tablespoon of Dijon mustard to the dressing.
- You can add other vegetables like bell peppers or cherry tomatoes.
