Elote Pasta Salad

Description

A creamy and flavorful pasta salad inspired by Mexican street corn (elote).


Ingredients

  • 1 pound pasta, cooked and cooled
  • 1 cup corn kernels, fresh or frozen
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1/4 cup grated cotija cheese
  • 2 tablespoons chopped cilantro
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a large bowl, combine the cooked pasta and corn kernels.
  2. In a separate small bowl, whisk together the mayonnaise, sour cream, cotija cheese, cilantro, lime juice, chili powder, salt, and pepper.
  3. Pour the dressing over the pasta and corn mixture.
  4. Toss gently to coat everything evenly.
  5. Chill for at least 30 minutes before serving.

Notes

  • For a spicier salad, add a pinch of cayenne pepper.
  • You can grill the corn for a smoky flavor.
  • Garnish with extra cilantro and cotija cheese before serving.
