Description
A creamy and flavorful pasta salad inspired by Mexican street corn (elote).
Ingredients

- 1 pound pasta, cooked and cooled
- 1 cup corn kernels, fresh or frozen
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1/4 cup grated cotija cheese
- 2 tablespoons chopped cilantro
- 1 tablespoon lime juice
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- In a large bowl, combine the cooked pasta and corn kernels.
- In a separate small bowl, whisk together the mayonnaise, sour cream, cotija cheese, cilantro, lime juice, chili powder, salt, and pepper.
- Pour the dressing over the pasta and corn mixture.
- Toss gently to coat everything evenly.
- Chill for at least 30 minutes before serving.
Notes
- For a spicier salad, add a pinch of cayenne pepper.
- You can grill the corn for a smoky flavor.
- Garnish with extra cilantro and cotija cheese before serving.
