Description

A refreshing pasta salad with Mediterranean flavors, featuring feta cheese, olives, and fresh vegetables.


Ingredients

  • 1 pound pasta, cooked and cooled
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup cucumber, diced
  • 4 ounces feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the cooked and cooled pasta, cherry tomatoes, Kalamata olives, red onion, cucumber, feta cheese, and parsley.
  2. In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and pepper.
  3. Pour the dressing over the pasta mixture and toss gently to combine.
  4. Chill for at least 30 minutes before serving to allow the flavors to meld.

Notes

  • For a heartier salad, add grilled chicken or chickpeas.
