- 8 ounces pasta, cooked and cooled
- 4 ounces goat cheese, crumbled
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh basil, chopped
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar
- Salt and pepper to taste
Instructions
- In a large bowl, combine the cooked and cooled pasta, crumbled goat cheese, cherry tomatoes, cucumber, red onion, and fresh basil.
- In a small bowl, whisk together the olive oil and red wine vinegar.
- Pour the vinaigrette over the pasta salad.
- Toss gently to combine all ingredients.
- Season with salt and pepper to your preference.
- Serve immediately or chill for later.
Notes
- For a heartier salad, add grilled chicken or chickpeas.
