Description

A simple pasta salad featuring creamy goat cheese, fresh vegetables, and a light vinaigrette.


Ingredients

  • 8 ounces pasta, cooked and cooled
  • 4 ounces goat cheese, crumbled
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh basil, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the cooked and cooled pasta, crumbled goat cheese, cherry tomatoes, cucumber, red onion, and fresh basil.
  2. In a small bowl, whisk together the olive oil and red wine vinegar.
  3. Pour the vinaigrette over the pasta salad.
  4. Toss gently to combine all ingredients.
  5. Season with salt and pepper to your preference.
  6. Serve immediately or chill for later.

Notes

  • For a heartier salad, add grilled chicken or chickpeas.
  • Adjust the amount of red onion to your taste.
