Description

A refreshing and creamy pasta salad featuring a vibrant Green Goddess dressing.


Ingredients

  • 1 pound pasta, cooked and cooled
  • 1 cup chopped cucumber
  • 1 cup cherry tomatoes, halved
  • 1/2 cup chopped red onion
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh chives
  • 1/4 cup chopped fresh dill
  • 1/2 cup mayonnaise
  • 1/4 cup Greek yogurt
  • 2 tablespoons lemon juice
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the cooked and cooled pasta, cucumber, cherry tomatoes, and red onion.
  2. In a separate small bowl, whisk together the mayonnaise, Greek yogurt, lemon juice, and minced garlic. Season with salt and pepper.
  3. Pour the dressing over the pasta mixture.
  4. Add the fresh parsley, chives, and dill to the salad.
  5. Toss gently to combine all ingredients.
  6. Chill for at least 30 minutes before serving.

Notes

  • For a lighter dressing, use all Greek yogurt.
  • Add grilled chicken or shrimp for a protein boost.
  • This salad can be made a day in advance.
