Description

A refreshing pasta salad with grilled chicken, fresh vegetables, and a light vinaigrette.


Ingredients

  • 1 pound pasta, cooked and cooled
  • 2 cups grilled chicken breast, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the cooked pasta, grilled chicken, cherry tomatoes, cucumber, and red onion.
  2. In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, salt, and pepper.
  3. Pour the dressing over the pasta mixture and toss to combine.
  4. Stir in the fresh parsley.
  5. Chill for at least 30 minutes before serving.

Notes

  • You can add other vegetables like bell peppers or corn.
  • For a creamier dressing, add a tablespoon of mayonnaise or Greek yogurt.
