A refreshing pasta salad with grilled chicken, fresh vegetables, and a light vinaigrette.
Ingredients

- 1 pound pasta, cooked and cooled
- 2 cups grilled chicken breast, chopped
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions
- In a large bowl, combine the cooked pasta, grilled chicken, cherry tomatoes, cucumber, and red onion.
- In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, salt, and pepper.
- Pour the dressing over the pasta mixture and toss to combine.
- Stir in the fresh parsley.
- Chill for at least 30 minutes before serving.
Notes
- You can add other vegetables like bell peppers or corn.
- For a creamier dressing, add a tablespoon of mayonnaise or Greek yogurt.
