Healthy Pasta Salad

Description

A light and refreshing pasta salad packed with vegetables and a zesty dressing.


Ingredients

  • 8 ounces whole wheat pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, finely chopped
  • 1/2 cup bell pepper, diced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Cook whole wheat pasta according to package directions. Drain and rinse with cold water.
  2. In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, red onion, and bell pepper.
  3. In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, garlic powder, salt, and pepper.
  4. Pour the dressing over the pasta and vegetable mixture.
  5. Add the chopped parsley and toss gently to combine.
  6. Chill for at least 30 minutes before serving.

Notes

  • For added protein, you can add grilled chicken or chickpeas.
  • Feel free to add other vegetables like broccoli florets or shredded carrots.
