A festive and easy pasta salad perfect for your Independence Day celebration.
Ingredients

- 1 pound rotini pasta
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, finely chopped
- 1/2 cup black olives, sliced
- 1/2 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Cook rotini pasta according to package directions. Drain and rinse with cold water.
- In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, red onion, black olives, and feta cheese.
- In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
- Pour the dressing over the pasta mixture and toss to combine.
- Stir in the fresh parsley.
- Chill for at least 30 minutes before serving.
Notes
- For a creamier salad, you can add a dollop of mayonnaise or Greek yogurt to the dressing.
- Add grilled chicken or shrimp for a heartier meal.
- This salad can be made a day in advance.
