July 4th Pasta Salad

Description

A festive and easy pasta salad perfect for your Independence Day celebration.


Ingredients

  • 1 pound rotini pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, finely chopped
  • 1/2 cup black olives, sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook rotini pasta according to package directions. Drain and rinse with cold water.
  2. In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, red onion, black olives, and feta cheese.
  3. In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
  4. Pour the dressing over the pasta mixture and toss to combine.
  5. Stir in the fresh parsley.
  6. Chill for at least 30 minutes before serving.

Notes

  • For a creamier salad, you can add a dollop of mayonnaise or Greek yogurt to the dressing.
  • Add grilled chicken or shrimp for a heartier meal.
  • This salad can be made a day in advance.
