Description

A simple and delicious pasta salad that kids will enjoy, perfect for lunches or picnics.


Ingredients

  • 1 cup rotini pasta, cooked and cooled
  • 1/2 cup chopped cucumber
  • 1/2 cup chopped bell pepper (any color)
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup cooked ham or chicken, diced
  • 2 tablespoons mayonnaise
  • 1 teaspoon lemon juice
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the cooked and cooled rotini pasta, chopped cucumber, chopped bell pepper, shredded cheddar cheese, and diced ham or chicken.
  2. In a small bowl, whisk together the mayonnaise and lemon juice.
  3. Pour the dressing over the pasta mixture and toss gently to combine.
  4. Season with salt and pepper to your preference.
  5. Serve immediately or chill for later.
