Orzo Pasta Salad

Description

A simple and refreshing orzo pasta salad with fresh vegetables and a light vinaigrette.


Ingredients

  • 1 cup orzo pasta
  • 1/2 cup chopped cucumber
  • 1/2 cup chopped bell pepper (any color)
  • 1/4 cup chopped red onion
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Cook orzo pasta according to package directions. Drain and rinse with cold water.
  2. In a large bowl, combine the cooked orzo, cucumber, bell pepper, red onion, and parsley.
  3. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  4. Pour the dressing over the orzo mixture and toss to combine.
  5. Chill for at least 30 minutes before serving.

Notes

  • You can add other vegetables like cherry tomatoes or olives.
  • Feta cheese or mozzarella balls are a nice addition.
  • For a heartier salad, add grilled chicken or chickpeas.
