A refreshing and easy shrimp pasta salad perfect for picnics or light meals.
Ingredients

- 1 pound pasta, cooked and cooled
- 1 pound cooked shrimp, peeled and deveined
- 1 cup chopped celery
- 1/2 cup chopped red onion
- 1/2 cup chopped bell pepper
- 1/2 cup mayonnaise
- 2 tablespoons lemon juice
- 1 tablespoon Dijon mustard
- Salt and pepper to taste
Instructions
- In a large bowl, combine the cooked pasta, shrimp, celery, red onion, and bell pepper.
- In a separate small bowl, whisk together the mayonnaise, lemon juice, and Dijon mustard.
- Pour the dressing over the pasta mixture and toss to coat evenly.
- Season with salt and pepper to taste.
- Chill for at least 30 minutes before serving.
Notes
- For a spicier kick, add a pinch of cayenne pepper to the dressing.
- You can add other vegetables like peas or corn.
- Garnish with fresh parsley before serving.
