A simple and refreshing tortellini pasta salad perfect for picnics or potlucks.
Ingredients

- 1 (20 ounce) package refrigerated cheese tortellini
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, finely chopped
- 1/2 cup black olives, sliced
- 1/2 cup mayonnaise
- 1/4 cup grated Parmesan cheese
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Cook tortellini according to package directions. Drain and rinse with cold water.
- In a large bowl, combine the cooked tortellini, cherry tomatoes, cucumber, red onion, and black olives.
- In a small bowl, whisk together the mayonnaise, Parmesan cheese, and lemon juice.
- Pour the dressing over the tortellini mixture and toss to coat.
- Season with salt and pepper to taste.
- Chill for at least 30 minutes before serving.
Notes
- For a creamier dressing, you can add a tablespoon of sour cream or Greek yogurt.
- Add cooked chicken or ham for a heartier salad.
- This salad can be made a day in advance.
