Tortellini Pasta Salad

Description

A simple and refreshing tortellini pasta salad perfect for picnics or potlucks.


Ingredients

  • 1 (20 ounce) package refrigerated cheese tortellini
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, finely chopped
  • 1/2 cup black olives, sliced
  • 1/2 cup mayonnaise
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook tortellini according to package directions. Drain and rinse with cold water.
  2. In a large bowl, combine the cooked tortellini, cherry tomatoes, cucumber, red onion, and black olives.
  3. In a small bowl, whisk together the mayonnaise, Parmesan cheese, and lemon juice.
  4. Pour the dressing over the tortellini mixture and toss to coat.
  5. Season with salt and pepper to taste.
  6. Chill for at least 30 minutes before serving.

Notes

  • For a creamier dressing, you can add a tablespoon of sour cream or Greek yogurt.
  • Add cooked chicken or ham for a heartier salad.
  • This salad can be made a day in advance.
