Ingredients
Scale
- For the Cheesecake Base:
- 8 oz cream cheese, softened
- ¼ cup powdered sugar
- 1 tsp vanilla extract
- 1 tub (8 oz) whipped topping, thawed
- For the Fruit:
- 2 cups sliced peaches (fresh, canned, or frozen and thawed)
- 1 cup chopped strawberries (optional)
- 1 cup mini marshmallows (optional)
- For the Cobbler Crunch:
- 1 cup crushed graham crackers or cinnamon cookies
- 2 tbsp melted butter
- 1 tbsp brown sugar
- ½ tsp ground cinnamon
Instructions
- In a large mixing bowl, beat softened cream cheese until smooth. Add powdered sugar and vanilla, beat until creamy. Fold in whipped topping until light and fluffy.
- Slice peaches and strawberries (if using). Drain canned or thawed fruit well.
- In a small bowl, combine crushed cookies with melted butter, brown sugar, and cinnamon to make the cobbler crunch.
- Gently fold fruit and marshmallows into the cheesecake mixture. Sprinkle cobbler crunch on top before serving, or fold it in for more texture.
- Chill in the fridge for 1–2 hours before serving. Serve cold with extra crumble on top!
Notes
Use fully softened cream cheese for the smoothest texture. Add the cobbler crunch just before serving to keep it crisp. Customize with berries, coconut flakes, or a splash of bourbon!
