Yield: 12 large servings
Ingredients:
For the Peanut Butter Sheet Cake
• 2 cups all-purpose flour (250 g)
• 2 cups granulated sugar (400 g)
• 1 teaspoon baking soda
• ½ teaspoon salt
• 1 cup unsalted butter (226 g)
• 1 cup creamy peanut butter (250 g)
• 1 cup water (240 ml)
• ½ cup buttermilk (120 ml)
• 2 large eggs
• 1 teaspoon vanilla extract
For the Peanut Butter Frosting
• ½ cup unsalted butter (113 g)
• ½ cup creamy peanut butter (125 g)
• ¼ cup milk (60 ml)
• 3 cups powdered sugar (360 g)
• 1 teaspoon vanilla extract
• Pinch of salt
How to make it:
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan or line it with parchment.
- In a large bowl, whisk together flour, sugar, baking soda, and salt. Set aside.
- In a saucepan over medium heat, melt the butter with the peanut butter and water. Stir until smooth and just beginning to simmer.
- Pour the warm peanut butter mixture over the dry ingredients and mix until combined.
- Add buttermilk, eggs, and vanilla extract. Whisk until the batter is smooth and creamy.
- Pour the batter into the prepared pan and bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
- While the cake bakes, make the peanut butter frosting. In a saucepan over medium heat, melt butter with peanut butter and milk, stirring until smooth.
- Remove from heat and whisk in powdered sugar, vanilla, and salt until thick and creamy.
- Pour the warm peanut butter frosting over the warm cake and spread evenly. The frosting will soak slightly into the cake, creating that classic sheet cake texture.
- Let the Peanut Butter Sheet Cake cool for about 20–30 minutes before slicing.
Serve slightly warm for the softest, gooey peanut butter cake experience.
