Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup (1 stick) unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup hot cocoa mix
  • 1/2 cup chocolate chips
  • 1/4 cup crushed peppermint candies

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour an 8×8 inch baking pan.
  2. In a bowl, whisk together flour, cocoa powder, baking powder, and salt.
  3. In a separate bowl, combine sugar, melted butter, eggs, and vanilla extract.
  4. Stir in the hot cocoa mix.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in chocolate chips.
  7. Pour batter into the prepared pan.
  8. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
  9. Let cool completely.
  10. Sprinkle with crushed peppermint candies before serving.

Notes

  • For extra peppermint flavor, add a few drops of peppermint extract.
