A rich and flavorful pumpkin curry made with aromatic spices and creamy coconut milk.
Ingredients

- 500g pumpkin, cubed
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 tbsp ginger, grated
- 1 can (400ml) coconut milk
- 2 tbsp curry powder
- 1 tbsp vegetable oil
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp salt
- 1 cup water
- Fresh cilantro for garnish
Instructions
- Heat oil in a large pot over medium heat.
- Add onion, garlic, and ginger. Sauté until soft.
- Stir in curry powder, turmeric, cumin, and coriander. Cook for 1 minute.
- Add pumpkin cubes and coat with spices.
- Pour in coconut milk and water. Bring to a simmer.
- Cover and cook for 20-25 minutes until pumpkin is tender.
- Garnish with fresh cilantro before serving.
Notes
- Use butternut squash if pumpkin is unavailable.
- Adjust spice levels to your preference.
- Serve with rice or naan bread.
