Description

A simple and refreshing pasta salad with classic Italian flavors, perfect for picnics or a light meal.


Ingredients

  • 8 ounces rotini pasta, cooked and cooled
  • 1 cup cherry tomatoes, halved
  • 1/2 cup black olives, sliced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup bell pepper, chopped (any color)
  • 1/4 cup mozzarella balls, halved
  • 1/4 cup Italian dressing
  • 2 tablespoons fresh basil, chopped
  • Salt and pepper to taste

Instructions

  1. Cook rotini pasta according to package directions. Drain and rinse with cold water.
  2. In a large bowl, combine the cooled pasta, cherry tomatoes, black olives, red onion, bell pepper, and mozzarella balls.
  3. Pour the Italian dressing over the salad.
  4. Add the chopped basil.
  5. Toss gently to combine all ingredients.
  6. Season with salt and pepper to your preference.
  7. Chill for at least 15 minutes before serving.

Notes

  • For a heartier salad, add grilled chicken or chickpeas.
  • Adjust the amount of dressing to your liking.
