Quick Mediterranean Pasta Salad

Description

A fast and fresh pasta salad with Mediterranean flavors.


Ingredients

  • 8 ounces pasta
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup Kalamata olives, pitted and halved
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package directions. Drain and rinse with cold water.
  2. In a large bowl, combine cooked pasta, cherry tomatoes, cucumber, red onion, and Kalamata olives.
  3. In a small bowl, whisk together olive oil, lemon juice, and oregano. Season with salt and pepper.
  4. Pour dressing over pasta mixture and toss to combine.
  5. Stir in feta cheese.
  6. Serve immediately or chill for later.

Notes

  • For a heartier salad, add grilled chicken or chickpeas.
  • Adjust lemon juice and seasonings to your preference.
